Dubai issues new 'healthy' rules for shawarma outlets

Dubai’s authorities issued new rules for shawarma restaurants to ensure healthier conditions for the preparation and selling of such dishes.

The rules were contained in a booklet sent by the Municipality to 472 restaurants and shops involved in the sale of this popular meat dish throughout the emirate.

“The aim of these new rules is to ensure a healthier environment for the preparation and selling of shawarma,” said Sultan Al Taher, food inspection director at the Municipality.

“We decided to issue these rules after we noticed that the restaurants involved in selling shawarma have largely increased and many of them prepare and sell this dish randomly. Our inspectors noticed that many restaurants do not have enough space for the preparation of shawarma although it has several components,” he told the Dubai-based Arabic language daily Emarat Alyoum.

He said some restaurants were found to be violating meat preparation and storage and others lacked proper washing and ventilation systems.

“The new rules were enforced at the start of this month…all restaurants must ensure they have sufficient spaces of at least 10 square metres for the preparation and selling of shawarma. They should also work to improve the storage systems for meat and all components of this dish,” he said.
